Though the average user is better off going the easy routes of updating i OS with i Tunes or OTA, IPSW can have very practical uses as well.

Media Monkey can sync your music, videos and playlists to your i Phone/i Pod/i Pad.

Typically a normal i Tunes based restore is sufficient, which is why that is fairly rare.

Finally, there are some cases where IPSW is necessary to create custom configured firmware for future restores.

If you have an i OS device like an i Phone, i Pad or i Pod Touch you'll need to have i Tunes installed. An alternative to i Tunes is Copy Trans Drivers which will only install the required i Tunes components for syncing, however this isn't officially supported by Apple or Media Monkey.

If you have i Tunes installed you need to make sure it is not set to automatically sync your media to your device: Do not uninstall i Tunes if you are using an i OS device like i Phone, i Pod Touch or i Pad.

This typically ties in with the “Restore” method of updating, which allows the use of custom IPSW files, and is generally something created with a third party application like Pwnage Tool or sn0wbreeze.
